Pu'erh is produced in the Yunnan province of China, and is a unique and unusual slightly aged tea that is famed for its medicinal qualities. This tea is generally aged for 6 months to 1 year, and approximates the result of the long aged Pu'erh tea process. It is unusual because unlike other teas, it uses an accelerated fermentation process called The Wo Dui (wet-piling) process, which involves piling, dampening, and turning the tea leaves. This process ensures even fermentation. Pu'erh is the most oxidized form of tea and can mellow and improve with age like fine wine. It’s distinct flavor comes from the fact that, after the leaves are picked, they are made into a sundried base tea called maocha, and then fermented. It produces a dark red liquor with a full-bodied, earthy taste.

Daily serving size: Pour 8 oz of simmering water (185-195° F preferred) over 1 tsp. of tea. Steep 3-4 minutes.
